Problem I'm having is finding a 205/65 16" AT tyre, Yokos geolandars don't seem to be available in this size anymore

You need to upload the photo somewhere and then embed an image link with a tag like:

I roughly measured my front discs and they were 320mm, would 15" wheels fit over these?

Sounds like the 312mm discs, in that case, no.

Just fallen on some other VAG forums that suggest 15" wheels will not fit over 312mm brake discs, is anyone able to advise?

This is correct, I thought the discs on my car were 312mm, but it turns out they're 288mm.
In any case, I'd suggest test fitting a 15" rim to give yourself peace of mind before buying 4 or 5 rims and tyres.

Also make sure you check on the rear too - Standard brakes should be fine... but...
I have 312 Fronts and 310 vented rears. 17" is the smallest that fits on the rear, because of the handbrake part of the caliper :-(

After checking with VW Checking my VIN, I just bought some steel factory 15's for my 312mm front rotors and they DO NOT FIT! That's not good, can you return the steelies?
I've gone for some Yoko geolandars on the 16" alloys. Got fed up looking at over priced rusty steels with barely legal tyres on.

Hmmm, that's a shame, and weird. I've used VW Caddy steel 15" rims and am now using VW 15" SIMA rims. Not an aftermarket rim kinda person.

Yikes! Humble apologies, turns out I don't know what I'm talking about. I was pretty certain that my disc size was 312mm, but I didn't investigate when changing the wheels because there is only one size of brake disc used on South African Caddys, so no point, most of them have steel wheels. Turns out they are 288mm discs and not 312mm.
